Easy Hainan Chicken Rice Recipe : How to make Hainan Chicken Rice

 



Today, I will make Hainanese Chicken Rice, which is a representative dish of Singapore.

Ingredients

  • Chicken thigh: 600g

  • Water: 1.5L

  • Minced ginger: 1 tablespoon

  • Minced garlic: 1 tablespoon

  • Green onion: 20g

  • Salt: 2 tablespoons

  • Cooking wine (Cheongju): 90ml

  • Bok choy

  • Cooking oil: 2 tablespoons

  • Chicken fat

  • Minced garlic: 1 tablespoon

  • Minced ginger: 0.5 tablespoon

  • Short grain rice (Annam rice): 300g

  • Chicken broth: 300ml

  • Salt: 0.3 tablespoon

  • Chicken broth: 50ml

  • Dark soy sauce: 3 tablespoons

  • Chilli powder (Gochugaru): 1 tablespoon

  • Sugar: 1 tablespoon

  • Sesame oil: 2 tablespoons

  • Red chili pepper: 10g

  • Green chili pepper: 10g

  • Chicken broth: 2 tablespoons

  • Vinegar: 1 tablespoon

  • Sugar: 1 tablespoon

  • Salt: 0.3 tablespoon

  • Minced garlic: 0.5 tablespoon

  • Minced ginger: 0.2 tablespoon

Cooking Instructions

  1. Remove the yellow fat from the chicken thighs (600g).

  2. In a pot, add the following ingredients and boil for 15 minutes:

    • Water: 1.5L

    • Chicken thighs

    • Minced ginger: 1 tablespoon

    • Minced garlic: 1 tablespoon

    • Green onion: 20g

    • Salt: 2 tablespoons

    • Skim off any impurities while boiling.

  3. After 15 minutes, strain the chicken and solids, then blanch the bok choy in the broth briefly.

  4. In a pot, add the following ingredients and sauté:

    • Cooking oil: 2 tablespoons
    • Chicken fat
    • Minced garlic: 1 tablespoon
    • Minced ginger: 0.5 tablespoon

  5. When the garlic turns golden brown, add the following ingredients, cover, and simmer on low heat for 10 minutes:

    • Short grain rice (Annam rice): 300g

    • Chicken broth: 300ml

    • Salt: 0.3 tablespoon

    • After 10 minutes, turn off the heat and let it steam with the lid on for 5 minutes.

  6. Mix the following ingredients to make the soy sauce:

    • Chicken broth: 50ml
    • Dark soy sauce: 3 tablespoons
    • Chilli powder (Gochugaru): 1 tablespoon
    • Sugar: 1 tablespoon
    • Sesame oil: 2 tablespoons

  7. In a chopper, combine the following ingredients and chop to make the chili sauce:

    • Red chili pepper: 10g
    • Green chili pepper: 10g
    • Chicken broth: 2 tablespoons
    • Vinegar: 1 tablespoon
    • Sugar: 1 tablespoon
    • Salt: 0.3 tablespoon
    • Minced garlic: 0.5 tablespoon
    • Minced ginger: 0.2 tablespoon

  8. Plate the ingredients in a bowl, and your dish is complete!
