Ingredients

  • Beef: 800g

  • Salt

  • Pepper

  • Onion

  • Dark soy sauce: 50ml

  • Sake: 50ml

  • Mirin: 50ml

  • Water: 50ml

  • Sugar: 2 tablespoons

  • Yogurt: 80g

  • Mayonnaise: 3 tablespoons

  • Lemon juice: 3 tablespoons

  • Sugar: 1 tablespoon

  • Rice: 2 servings

  • Egg yolk

  • Black sesame seeds

Cooking Instructions

  1. Generously season 800g of beef with salt and pepper, then roast in a 100°C oven for 1 hour.

  2. After 1 hour, heat cooking oil in a pan and sear the outside of the beef.

    • The internal temperature should reach 54°C for the beef to be well-cooked. If it's below 54°C, continue roasting in the oven.

  3. Wrap the roasted steak in foil and let it cool in the refrigerator.

  4. In a pan, add the following ingredients and bring to a boil to make the sauce:

    • Dark soy sauce: 50ml
    • Sake: 50ml
    • Mirin: 50ml
    • Water: 50ml
    • Sugar: 2 tablespoons
    • Chopped onion

  5. In a bowl, mix the following ingredients to make the yogurt sauce:

    • Plain yogurt: 80g
    • Mayonnaise: 3 tablespoons
    • Lemon juice: 3 tablespoons
    • Sugar: 1 tablespoon

  6. To serve, place the following ingredients on top of the rice:

    • Rice: 2 servings
    • Onion sauce
    • Roast beef
    • Egg yolk
    • Black sesame seeds
    • Yogurt sauce
